The recipe for our new pesto lasagne

In this blog, we present a new recipe, developed by our chef for our spring menu. We're sure it will be one of our bestsellers: green pesto lasagne!

Our chef, Emmanuel, has come up with a new recipe that is sure to delight the tastebuds. He has taken one of our classics, lasagne, and given it a springtime twist. By incorporating pesto into the béchamel sauce and substituting seasonal vegetables for meat, he has created a succulent green pesto lasagne! You can find his recipe below:

Recipe for our green pesto lasagne: 

Ingredients: 

For the pesto : 

- 4 chopped garlic cloves

- 80g fresh basil

- 60g pine nuts 

- 40g grated grana Padano cheese

- 1.6 dl olive oil

For the béchamel sauce :

- 60 cl whole milk

- 50g flour

-50g butter

For the lasagne :

- 100g peas

- 100g carrot cubes

- 100g courgette cubes

- 200g lasagne sheets

- salt & pepper for seasoning

Recipe

Step 1: Preheat the oven

Preheat the oven to 180°C, ready to bake.

Step 2: Cook the vegetables

Cook the vegetables in a large pan of boiling salted water, uncovered, for 5 minutes. Then set aside.

 Step 3: Prepare the bechamel

Melt the butter in a saucepan, then add the flour all at once, followed gradually by the milk. Stir for 10 minutes over a low heat.  Cover the pan and leave to cool.

Step 4: Make the pesto 

Rinse the basil, then pat dry and remove the leaves. Mash the pine nuts and garlic in a large mortar until you have a paste. Add the salt and basil leaves bit by bit while grinding in circular movements until the mixture is green and shiny. Grate the Parmesan over it, then add the oil and mix. Season with pepper.

Step 5: Combine your fillings

Mix together roughly your bechamel, vegetables and pesto.

Step 6: Build your lasagne 

Oil or butter the lasagne dish to prevent sticking. Place a thin layer of the béchamel mixture on top, followed by the lasagne sheets, the béchamel and the grana padano. Repeat the operation 3 times in a row. For the final layer, simply add the béchamel sauce and sprinkle with the grana padano.

Step 7: Bake! 

Bake the lasagne in the middle of your warm oven for around 25 minutes. The cheese on the top should be just turning brown and crispy. Serve piping hot!
