Sweet potato and lentil bowl

Recipe (for 4 people)

Ingredients:

  • 4 large sweet potatoes, cut into cubes
  • 4 cups of fresh spinach, roughly chopped
  • 1 cup of cooked green lentils
  • 1 large onion, finely chopped
  • 1 cup of chickpeas
  • 1/2 cup of cream
  • 60g of gorgonzola 
  • 4 tablespoons of high quality olive oil
  • 8 cloves of garlic, finely crushed
  • A table spoon of vegetable stock
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of nutmeg
  • 1/2 teaspoon of chilli powder
  • 4 bay leaves
  • a large pinch of salt and pepper for seasoning
  • sunflower oil for frying (or another cooking oil with a high smoke point)

Instructions:

1. Prepare the lentils:

Rinse the lentils and then simmer them with the bay leaves and vegetable stock for around 15 minutes until soft. Remove the bay leaves after cooking. Set aside.

2. Prepare the vegetables:

Heat a small amount of sunflower oil in a frying pan over a medium heat. Add 4 minced garlic cloves and half the chopped onion and sauté until golden. Add 2 cups of fresh spinach and heat until just wilted.

3. Add the chickpeas :

Add 1 cup of cooked chickpeas to the pan with the sautéed vegetables. Mix well.

4. Prepare the sauce: 

In a saucepan over a low heat, mix the cream, gorgonzola, salt, pepper, paprika, nutmeg and chilli and stir until smooth. 

5. Assemble the bowl:

In a large bowl, arrange the cooked lentils, diced roasted sweet potato, spinach and sautéed chickpeas gently mix and pour the sauce over the top.

6. Serve:

Serve hot and enjoy this deliciously flavoured and balanced bowl.
